Buttermilk Brownie Cake

After my mom made this for us, my husband, a lover of chocolate, proclaimed this the best chocolate cake he has ever eaten. Figured I'd better get the recipe from my mommy...and why not share it with all of you?

Buttermilk Brownie Cake
2 c sugar
2 c flour
1/4 c cocoa powder
1/2 c vegetable oil
1/2 c butter
1/2 c buttermilk (or sour milk)
1 tsp baking soda
2 eggs, lightly beaten
1 c water
1 tsp vanilla
1/4 tsp salt

Combine sugar, flour, cocoa and mix well. Combine water with oil and butter in medium saucepan. Bring to boil. Add to flour mixture and mix well. Add buttermilk, baking soda, salt, vanilla and eggs. Beat well by hand. Pour into two round layer pans. Bake 30-35 mins at 350.
(Make sure pans are greased and floured well.)

Chocolate Buttercream Frosting:
(Ingredients are approximate due to the fact that my mom eyeballs this when she makes it...)
1/2 c (a little less) butter
1 tsp vanilla
pinch salt
6 TBS cocoa powder
2 c powdered sugar
2-3 TBS cream
Begin beating and then add around another 2 cups pwd sugar and another few TBS cream. Eyeball it, add more pwd sugar or cream till you get it the right consistency.

Frost that puppy and get yourself a happy husband!

Law Students: Together Again

We managed to find our way to a few of our law school friends (or they found our way to us) for quick little reunion. It was so fun to chat and catch up even if it was for just a short time. The kids took a minute to warm up to their old pals, but they eventually ran and played like no time at all had passed.We are so blessed to have such wonderful people in our lives; these two families being at the forefront.Melanie, Lindsay, Natalie
